Farmed salmon even here in the PacNW are often some ugly Atlantic salmon Franken-fish.
Here's what we do, takes 2 people in the kitchen:
One does the Coho steaks in the usual butter/mayo and dill in a pan.
I'll cut carrots, potatoes, yams, parsnips and beets for chips at 375F in 1" oil.
Then you can turn your back and build a salad thing if you need it.
The chips take 3 mins 30 sec in a seasoned flour to cook through.
Tonight is just Pacific halibut and twice-cooked baked potatoes with salad.
Today in the grocery store is fresh oysters (NOT Pacific) and Steelhead and Cod.
Paralytic Shellfish Poisoning has shut off our entire coastal shellfish industry.
