What to do with plums?

Long story short, my neighbor is one of those people that thinks fruit and vegetables grow in the cellophane in the supermarket and had a plum tree she does not pick so asked if I would like them. All of them. And there's about a bin liner full. Anyone got any ideas what to do with about 14lbs of plums?

They'll be a 5 gallon of wine going on. Ideally I'd like to give something back to my neighbor made from them to prove to her they're edible but doesn't drink. Fruit leather sounds intriguing. Not something I've ever tried or even eaten

Fruit leathers are lovely, especially with tart fruit. A savoury plum sauce is a wonderful thing...staple of many a duck based oriental dish.

Think I'll make some up and freeze it in anticipation for September 1st then!
