Are the non edible ones actually poisonous or just not palatable?
I've not really looked into it, I've just not seen them mentioned as being edible and I tend to look at quite a few weird edible veg.

Looking at PFAF they flowering gingers they lost as not toxic but listed under famine food.

Its something I should look into a bit more. I've also just remembered a friend used to grow cardamom in the uk, leaves were eaten but I don't know the variety.
