I've practiced stitching leather with darning needles and dental floss thread. Use a bradawl or a sharpened small nail set in a bit of wood.
You can pick up an old leather jacket/bag/item in a charity shop for next to nothing. (you may even ask the team there if they are throwing away any wornout stuff, donated but not up to scratch for selling), unpick the seams and you've got plenty of leather bits to practice on.
I recall someone (i think Waylander) talking about pouches being the last stop for recycled bits of leather in medieval times, so you'd be authentic :)

Just out of interest, is it possible to waterproof chamois leather? And if so, what with?
