Someone asked for the recipe for the flapjack I took to Middlewood, so here it is.
250g oats. 125g demerara sugar. 200g unsalted butter. 4 tablespoons honey. Teaspoon of ginger. Teaspoon of cinnamon. Pinch of salt.
Use a small cube of butter to grease a baking tray.
Cut the butter into small chunks and melt them in a pan over a low heat.
Add the sugar and honey. Stir until its all dissolved and mixed together.
Add the oats, spices and salt. Mix well the take pan off the heat.
Pour the mix into the baking tray. Use a spoon to spread it evenly.
Bake at 190 C for 15-20 minutes.
Take tray out of oven and leave to cool for 15 minutes.
Turn the flapjack out and cut into slices.
