Rabbit over open fire

All,

what is the best way to cook freshly despatched and prepared rabbit over an open fire? Should I let it hang overnight before trying? Should I cook as soon as prepared?

Either or, I don't think it makes much difference.

I've skewered most of them whilst they've still been warm and I've also ahd a few which have been brought in from previous kills.

Stewed with lots of onions and sherry is also good....

Fry the onions first to get the sugars and colour out, add the sherry near the end (don't spare the horses!)

Pan fried with lots of onions, garlic and Welsh butter (Welsh butter is saltier than most others - a historical anomally) - delish!

i enjoy rabbit cooked on an open fire and enjoy chewing as our old folks did or in the pot with carrot and potato as the travellers do. Very under rated and abundent food .
