Heres one for you :shock: You've been out for the day and you have got your, Jews ear, Chicken of the woods, Earthballs, Hazel nuts, Blackberrys, Nettle tops, pig nuts, elder berrys,,,, you get the idea :lol: you tip them out on the kitchen work surface and after your other half has finished chewing your ear off about the creepy crawlys coming out of your prized chicken of the woods :rolmao: you think to your self Hmmmm what the hell do i do with this lot :yikes: ! Now have you got any Foraged food recipe books or recipes which are your speciality or favorite? Ill start, Wild Food by Roger Phillips (if your into mushrooms/fungus his Mushroom/Fungus book is a must) if your into foraging and cooking this will take pride of place in your book shelf, Fantastic photographs and beautiful cooking tips from Pickled purslain to Bog murtle mead and a slight hint of humor added for extra bite, I love to cook (prefer to eat but doesn't every one :rolmao: ) got any new ideas for teasing my taste buds? :?: :naughty:
 
Something I've done with chicken & black fungus/cloud ears/whatever is handy is to stir fry then simmer in a light soy sauce & rice vinegar (or cider, or white wine, or whatever is handy again....) sauce. Works particularly well with the more rubbery fungi, I feel.
 
Sounds interesting ill try that, the rubbery type of fungus seem to be ok for gloopy soup but not alot else, I tried jews ear's last year,I wont be this year
I find them best thinly slliced and stir fried ;-) You can even get them to go crispy if you don't like that rubbery texture.
