I`ve frozen oysters before and they were fine when we came to use them, still had all the flavour of fresh ones aswell.

I`ve heard of people pickling mushrooms but I`ve never tried it myself.

I usually dry them and part of it then goes into a flask of olive oil, togheter with some wholy garlic bulbs. Nice for pasta dishes :)

Roughly 2 - 4mm slices are best for drying. Use something like a cake cooling stand and put in on a window sill. Can dry them in a very cool oven with the door slightly open.
