Hey all,

I always seem to e throwing ginger away, is there an easy way to preserve it

You can freeze fresh ginger. It does soften a bit when defrosted but is still usable. You can also grate it from frozen of the recipe needs grated or finely chopped.

Hi Pignut,you could also make homemade Japanese pickled ginger to go along with Sushi.
Easy to make and it will keep for several months.
Here's the recipe

7oz fresh ginger root
1-2 tsp of salt
8fl oz of rice vinegar
4fl oz water
3tbsp of sugar

1.Peel the ginger,then lightly rub salt over the root and leave for 24 hours.
2.In a bowl ,mix the vinegar,water and sugar,and stir until the sugar has dissolved.Rinse and drain the ginger and add to the vinegar mixture. Leave to marinate for a week.(The ginger will turn pinkish in the vinegar mixture.) To use ,slice the ginger thinly along the grain,cutting only as much as you require.

There you go,this would tie in nicely with your fishing thread :D
