Plant ID's (Pic heavy)

While out walking the dog in a local field I saw some plants that took my interest.

(sorry for low quality they were taken on my phone)

1) This was growing in the middle field all on its own.

I also saw this little field mouse..dont need an ID, just cute.

pretty certain its not fox glove, they were not soft & hairy also too many leaves.

Havn't checked the guides but I wonder if 2 is a plantian, broader leaves than lanceolate plantain but otherwise quite similar.
3 yes jack by the hedge, garlic mustard or whatever you want to call it...good in a salad.
4 think your mouse is actually a vole (blunt nose), impressive to catch him on a mobile.
