Just picked a whole load of nettles to make soup. I usually do a leek and potato type soup, substituting nettles for the leeks. Anyone got a more inventive/exciting idea?
I washed some nettle shoots (about 20cms long ones) and and a few of the ransom leaves, blanched them quickly in fast boiling water and lifted them out to drain. Bunched them up with a smear of tabasco enriched tomato paste in the middle and laid them in a Seaweed leave covered with boiled rice. Rolled the whole thing up like a Swiss roll, wet and sealed the edge, then cut up the roll into little sushi things. Really nice. A friend said it was good with salmon too.
Think I'll have try with them as a layer in lasagne or burritos thingies too.
My wife does a lovely nettle soup each spring. She made a very tasty one last week using fennel, and would normally have added cooked rice to thicken but didn't have any, so crumbled three rice cakes in there instead. She also added some nutmeg.
Thanks, will definitely try the sushi thing, I love seaweed too! Thanks for the fennel and nutmeg tip too, it all sounds great. Will have a little experiment and let you know how it goes!
