Hi there
I am basically looking for quite a warm mid layer thatfits quite comfortable under my gortex jacket.
Being a fishermen we tend to be very static for days on end and in the past have found some walking makes just not warm enough,I have a duck down jacket which does the job perfectly and I just love the feel of it however I now need something to go under gortex jacket so ideally it will not be over bulky but provide as much warmth as poss
I am thinking along the lines of snugpack / soft-shell type products as I find these very comfortable over out and out fleeces.
Would prefer not to pay a fortune but any advice will be considered.

You could go the Bufallo/Montane/Snugpak pile lined route or maybe think about a Woolpower 400g top to go under the goretex
 
I have recently bought a Buffalo Special Six shirt to wear under my Dan Cam smock when it gets really cold. I'm very pleased with it but find it can be too warm even on a short but brisk walk. I tend to wear the buffalo now on its own unless its raining, which allows better ventilation. Its a great jacket/shirt and I would be great for fishing or anything else where you remain fairly static.

Look on Ebay - you can get modern synthetic jackets/gilets which are very warm and compress well plus warm when wet. Look fro patagonia puffball, or North face - I got a Pffball vest for £25, superb bit of kit.
 
As Fizzy rec'd,

the HH Dutch Army fleece-it's mainly a wool mix but comes with a full length zipper! Very helpful in cooling/adjusting your temp.
