I recently saw this recipe in an old cookbook (1890's), which I thought I'd share. Its a marinade for meat with which the recipe book says you can 'keep meat safely in the larder for up to 2 weeks'.
The alcohol and acids in the marinade should keep any bugs at bay. Might be a good mix to take camping to preserve and tenderise any critters you may happen to bag
Preserving Marinade
1/4 pint Wine Vinegar or Cider Vinegar
1/2 pint Red Wine
1 Pinch Nutmeg
1 Bayleaf
1 sprig Thyme
1 tsp Brown Sugar
1 1\2 tsp salt
Mix ingredients together. Add the meat and cover. Turn the meat regularly in the
marinade, ensuring all surfaces are kept moist.
It looks good, and I'll probably try it at some point. Of course, the usual caveats about raw meat and food safety apply!
