Like Jon, I have finally found what I have been searching for for a long time! Ok, so I had a tip off, but at least I recognised the plant! And it was thiiiis big. Loads of them but I was conservative. Not quite what I expected taste and texture-wise, but I can't help thinking its similar to something I've had before. A suprisingly strong taste, too.

Well done mate....Plenty of pignuts around again this year, but not quite as many as last year here....
Everyone I know seem to just dig them up, peel them and eat them there and then, but has anyone got any recepies for them. I suppose they would go well chopped and put in salads....

Any chance of some pictures, and advice on how you distinguish pignut from the other members of the same family (cow parsley etc.)

Pignuts are smaller that most umbellifers and have feathery leaves, not like the fern like ones of cow parsley or hemlock...
The nut is not directly under the stem, but off to a right angle, you need to dig it carefully...
Be very careful with carrot family, some you can eat, but some can kill you...
