Something we are often asked for is useful food preservation techniques that are easy for beginners.

Tonight we cover how to bottle / boiling water can tomatoes - a simple technique that needs no pressure canner.

This is a traditional skill that would have been familiar to my Grandmother but seems rarely done these days despite its accessibility

I've been drying Roma tomato halves @ 55C for 24 hours with consistent success. I pack jars and flood them with olive oil.
How well do you think that this compares with canning?

I think both have their place. I love dried tomatoes - we make a focaccia using them that is fantastic, but for a Marinara sauce I prefer fresh or bottled tomatoes
