If you've not done much camping or bivying (and even if you have but with all your creature comforts), a good way to start is to go out for a single night when the forecast looks promising.
You only need the equipment to keep you warm and dry while sleeping, and even then one uncomfortable night will be tolerable if you are going home in the morning!
Foodwise, you can bring almost anything this time of year and it won't go off before dinner/breakfast.
Make 'sleeping under a tarp' the focus of the outing, take your time and enjoy the experience!
