Hawthorn Berrys

Does anyone know the 'ripeness' needed to make the hawthorn 'jelly' on RM's Wild Food.
I've got loads on my hedge They're bright red outside but when I squash them they're still green inside.
Any ideas?

Wait for a frost and they sweeten up. They proberly won't sweeten up enough to make the haw leather very pleasant.
