Hi Waterboy. No offence but there simply is no such thing as a knife that will do everything.
If you are looking for a folding knife I guess the closest thing to that description would have to be the ubiquitous Swiss Army Knife or the Swiss Tool (or some other multi-tool like a Gerber or Leatherman). That leaves you with the choice of which make and model to buy. I would go for something like the Swiss Army "Ranger" It has two knife blades, one large one small, a decent wood saw, scissors, can opener, bottle opener, screwdriver, corkscrew and an awl. The blades do not lock and are of legal size for everyday carry in the UK so you shouldn't get into trouble for having it with you under normal conditions.

Just about the cheapest place to but SAKs that I have found so far is http://www.minitools.co.uk/index.htm?url=products/victorinox/index.htm Thats where I got my Ranger from and it goes everywhere with me other than on planes, to bed, and in the shower.

Leon, let me put it this way.... I have somewhere in the region of 30 folding knives to choose from and it's the Ranger that I carry every day, everywhere.
It might not suit everybody, but I think I've found uses for every blade on the thing at some time or another and I find it to be a good tool to have to hand. My only critisism would be that the main knife blade does not lock. This makes it legal to carry, but other than SAKs I don't own a folder that does not lock, I value my fingers too much.
