Chicken of the woods

Got a large one today (chicken of the woods!) and after giving some to a local pub/restaurant, a friend and a neighbour I still have quite a lot left. Can anyone help me with any recipies, preferabley with red wine involved as we have a couple of open bottles left over:rolleyes:

My (now ex) partner cooked a coq-au-vin... and it was eaten in Cockermouth, so it was Coq-au-vin-dans-cocker-bouche, and later that night..... <ahem>

But seriously this was not only the best mushroom dish I've ever tried, it was one of the the best tasting dishes I have ever eaten!
Then there's Chicken-of-the-Woods pie, CotW shelf-tips sauted in wild garlic butter and served up on some locally produced granary bread...

Sounds superb.... Not tried the mature mushrooms yet, first season. Although I did find two crackers last year, sadly growing out from Yew (so a big no-go).

I'll look forward to trying some in a month or so, as the area I know of, they grow in abundance :)
