Carving - Dry or Seasoned?

After looking around at different projects such as cups spoons, bush saw, knife scales etc I have one question

Do you do your carving with fresh wood or seasoned?

I have seen you use seasoned on the knife scales Im just wondering for other projects. I assume you would still be able to use seasoned it would just be harder?
 
carve wood green and finish when dry.

keep it in aplastic bage between sessions and dry slowly in a paper bag when done.
 
i have had good results with dead seasoned wood blackthorn and hawthorn....very hard to carve but had some awsome marks in the wood.
it was also the only wood i could get....
