I get asked very regularly what are the best knives and axes for woodcarving so have put together a bunch of info in blog posts.
These discuss the pros and cons of the various axe's on the market from the Gransfors small forest axe, carving axe or wildlife hatchet to cheap and cheerful axes from Argos and Bahco and old kent pattern axes etc.

Woodcarving knives have different requirements to general purpose knives and my personal taste is to have a general purpose knife that can take most of the abuse and a razor sharp knife that is kept purely for woodcarving. Whatever you use it is interesting to look at what makes the perfect woodcarving knife as opposed to a general purpose knife.
