Beech tree sap

was cutting back a beech tree mid december and sap was coming from the parts l cut, should the sap be rising then. Can l drink the stuff and as it still seems to be dripping on and off will l have killed it?
The branches l thinned back were about 2-3 inches in width, only a couple of them?

Wouldn't have expected sap to be rising but that's the thing with nature eh! beech sap was used in tuberculosis medicine I believe at some point so doing it'll shouldn't kill you, having not tried myself I ain't promising anything mind lol.
