To me, key steps are thin dough sheet _and_ roll it up snug and tight with no air spaces to balloon when baked.
That looks nicew and solid when he cuts it in half.

I'll scale the dough and prep for baguettes.
Pizza sauce, green pepper sticks and a venison pepperoni down the middle.
Sliced, the guts don't hang together nearly as well as his does.
