2 12oz packages Ground Sausage
2 8oz packages Cream Cheese, softened
30 Jalapeno Chili Peppers
1 lb sliced Bacon, cut in half
Found this recipe on another site, but adapted it to suit myself
No Ground Sausage so skinned 2 raw sausages and into a skillet and cook over medium high heat until evenly brown.
Whilst cooking hollow out Jalapenos - I had none so used sweet peppers instead:
Drain Sausage and place in a medium bowl to cool.
As my peppers weren't hot - I added my own heat
Mix with the cream cheese.
Stuff each Jalapeno with equal portions of the Sausage and Cream Cheese
mixture.
Wrap with half slices of Bacon and secure Bacon with toothpicks.
Arrange wrapped Jalapenos in a large, shallow baking dish. - I Grilled mine.
Bake in the preheated oven 20 minutes, or until the bacon is evenly brown.
Then tuck in.
I had mine on a bed of spring onions, beetroot and plum tomatos with sea salt and balsamic vinegar dressing.
