    Purple fungi?

These are one of my favourites, I always collect loads of these and dry them in my dehydrator to put into gravies and sauces. They add a great colour!

Have any of you guys got any good recipes for nettle beer? They are starting to show here and I'm looking at em thinking it seems a shame not to partake of their fermented goodness. :beerchug:

    Coltsfoot Wine

They seem to be everywhere here. I can always find them on the edges of woodland paths. We have quite a few quarries dotted about here (old ones are turned into lakes and wildlife areas) they seem to like that type of sandy soil and the place is covered in them, a true sea of yellow. :)

    Birch sap

I've moved demijohns before while still fermenting and it didn't make any difference. I suppose as long as you don't swish it around too much it shouldn't matter. Bet you can't wait till it's ready :D How did you make your wine? I just used birch sap, raisins and lemon juice. Aha, just found...

    Birch sap

Me thinks a couple of days, maybe no longer than four. Mine never lasts that long anyway as we usually drink it all. This year we are making wine for the first time. I know you can freeze it but again I have never tried.

    Coltsfoot Wine

[/IMG] Went out last weekend and collected some coltsfoot flowers to make some wine. Never made this one before so I'm really interested in how it turns out. If it's anything like all the other wild wines I have made it should be pretty good. [/IMG] I've also got some birch sap wine...

Whilst out yesterday collecting Birch sap for wine I came accross the first coltsfoot of the year :D I think its a must for collecting some at the weekend and making more wine. Has anyone tried making colstfoot wine before? It'll be a first for me and was wondering if it is anything like...
