Boiled linseed has drying agents added and is not intended for food use. Raw linseed is better but again is not sold as a food product so does not have to declare ingredients. I use either cold pressed raw bought from horse feed merchants or the cold pressed from Sweden but if it was just for personal use I would use walnut oil bought from any supermarket in a small bottle.

I always use Mineral Oil. It is food safe and doesn't go rancid. As others have said, Olive Oil will eventually go rancid.

Mineral oil does the job but always stays liquid so washes out. An oil that cures protects the wood better. It is not so critical on a spoon and I would not worry too much, even sunflower oil is OK. It does matter on small bowls or kuksas though.

Why oil?

I have never used any sort of finish on the spoons I have at home. I only oil my more expensive spoons so that peoples grubby fingers do not change the colour of the wood before they are sold. Dirty looking spoons do not sell as well.
