I saw this the other day on How its Made, but as I am in britian, the voice was a lackadaisical northern bloke not the lady as on this. I found it quite informative.

Other than it didnt explain how the tempering is done on a cryo knife, it seems pretty comprehensive.

Does that not look brutal ? and the close ups of the tang and rivets don't inspire with any fine finish, do they ?

Best mass production can muster, but from her opening statement of chef knives in a block, it didn't inspire confidence.

Most European chefs use a knife roll or one of those magnetic panels for their knives... and if I was reliant on a knife to earn my living, I'd prefer a handmade knife made by a professional. Might cost a few quid more, but you're guaranteed it's been carefully processed.
