Does anyone know a source of true mutton suet, just the fat from around the kidneys of a mature sheep? At the moment what I am using for tallow is the off cuts of fat from the lamb a kindly local butcher deals with.

I live in the Rossendale Valley in East Lancashire and need to be able to collect rather than have it posted.

The cheaper candles were made from any fat but the very best tallow came from the rendered suet of sheep and I'd like to make some for my faffing about experiments?

Jimmy Cropper, he of sheepdog fame, may be able to help you.
I believe he still lives in the farm above the Dearplay pub
