I'm just thinking a pair of cheapish but decent thin mitts to waterproof / weatherproof my dachstein mitts might be worth looking for.

Any suggestions?
 
Try looking for British army goretex over mitts used to be a brownish colour for one version other version were green or DPM i think.
 
Plain leather, canvas lined, gauntlet to cover your wrists, long coat cord so you don't drop them in the snow.
Pay attention to Inuit style, not to what I say from -40C experience.
I had 2 paird of Goretex mittens. Made my hands sweat really badly at -20C/not joke weather so I threw them in the garbage.

Maybe tight, maybe so. Military designers have been well-schooled.
The overall design is very close to what you see the Inuit make for themselves.
We had mitts like those as kids, coat cords and all.
