Runner bean seeds

Just picked out last runner bean pods today and shelled out the beans. Quite a good crop and they will be treated like dried beans, so boiled for 10 minutes before being used. As they are not fully dried they will all be cooked and frozen. They make a good addition to soups and stews and are great in home made chilli. Worth growing for young green beans as well as seeds.

The green bean pods need to be cooked, well-steamed at the very least. There's a toxin, phytohemagglutinin, that is heat labile. More than a small handful of raw pods is a drag on your red blood cells & their production.

First Nations out on the Great Plains of North America (eg the Hidatsa people) lived with the trilogy of corn, squash and beans.
What I've been reading suggests that they had dozens of genetic varieties of those staples.

Summertime mixed bean salad with a lot of cumin has been a favorite for decades.
