Rosebay willow herb?

I know the tips are edible. And the flowers. And the inner pith.
Are the roots?
Logic dictates they are but logic aint always applicable to wild edibles

I'm no fan of them, tbh, but if you take fresh leaves and crunkle them up a bit and leave them aside to dry; it makes tea that's okay

Yes, you can scrape the pith out with your finger nail and eat it raw, I have found (although I was starving at the time) that this will give a little sugar rush.
