Recipe for Birch sap wine?

Got some that we made in the spring, and have just started drinking now! It's bloomin strong, but perfectly drinkable... will find the recipe for you. I know it used raisins - and tbh, I'd be tempted to use less, or something else next time, as they tend to give it a sort of "sherry" edge.

found this wine recipe - looks simple enough - adding fruit like raisins is i assume essentially how they make wine taste different (so much of the NZ wine tastes like gooseberries!). I'd be intrigued to know what birch sap wine tastes like with nothing added other than the basics.
