Whats the best way to cut that stick down the middle so the fish can sit inbetween? Gently push an axe through it from top to bottom? Or knife?

Either way is good as the other.

You don't split it all the way down though, just enough so you can fit the fish in. You want the rest to be solid so you can stick it in the ground.

i tried this with trout, i de-boned it slightly differently but to the same effect my problem was i just could not split the stick properly, i had all sorts of attempts at it then gave up and ended up using 2 sticks, one long one to stick in the ground and a shorter one to hold the fish, all you have to do is bind both ends of the shorter stick and job done.

You could try binding the stick your splitting first. That way it shouldnt split too far past the binding then with a knife split slowly. I tried it with an axe but due to it being thicker it wasnt as controlable.
