Ok - Bit late but these worked for me over the weekend - and weren't so bad - well edible for me ( the wife wasn't so sure ! ) - i'm sure someone can improve on them.


Pumpkin Soup

2 x fistfull of scraped out pumpkin flesh
1 x finely chopped onion
3 fresh tomatoes
salf/pepper dash of
3 pints water

add all into pot, bring to biol and simmer 30 minutes.
bring off heat and strain completely via muslin to fresh clean pot.

bring back to heat ( not boil ) add tablespoon of cornflower to thicken slightly

serve with lots of bread. !


Pumpkin Cake


2 x fistfull of scraped out pumpkin flesh
2 x cup of flour
1 x cup of brown sugar
2 x eggs
1 x cup of nuts ( any - i used pecan/raison mix from aldi )

mash/blend/bang/smash pumpikin in a boul as hard/long as you can to a paste/
add all other items.
mix
add to greated cake tine ( mine was a rectangular one ) ( just wanted you to know.)
90 minutes @ 150 deg C ( dont know gas mark ) or till a fork is clean when inserted.

I had to do 2 of these - first one was hard shell with soft inner, too much heat for too little time ( 180 deg for 70 minutes) - , second was great sucess the 90 minutes @ 150 - kind of carrot cake texture - and very nice with tea !!!

Can’t stand the stuff I’m afraid but enjoy immensely hacking one about once a year with my trust Woodlore knife!

Good of you though to take the time in writing the recipes down for others.

Try this for the soup.

1 Pumpkin (scooped out etc)
Roughly an equivalent amount of Carrots
1 large Onion (or a couple of small ones)
As much Garlic as you like
Any other root vegetables you might have kicking around to throw in the pot.
Chicken stock
Olive Oil
Seasoning - salt, pepper & any fresh herbs that you might have

Cut up the onion and gently fry it in olive oil until transparent
Add the garlic
Cut up the vegetables and add them. Pour boiling water and stock over it all and cook for about 15 to 20 minutes.
Blend the lot. I use a hand blender right in the pan.

Serve with a dollop of cream stirred in.

The one I made last night was much the same as Rebel's, but with roasted yams instead of carrot + home grown Thai Dragon chillis + four good dollops (scientific unit of measurement) of Thai green curry paste + tin of coconut milk + splash of Nam Pla.
I use a Bamix hand blender (brilliant bit of kit) to smooth/mix things in situ once everything is cooked and softened. Serve with a swirl of sour cream and plenty of chopped fresh coriander (cilantro). It's a fabulous soup and one of our favourites. Plenty left for tonight.
