Preparing a bit of wood on a bandsaw

I just got a bandsaw and would like some guidance on preparing a bit of wood for making things. The wood in question is a bit of log, believed to be well-seasoned cherry (been in my garage for years), about a foot long and 3-4" in diameter. It still has the bark on it. I don't really know what I want to make yet, but scales for a full tang knife is one possibility.

Should I strip the bark off first? What part(s) of the wood should I be aiming to use - the heartwood or the sapwood? Do I slice it down the middle and proceed from one or other of the halves, or take slices from the periphery and work inwards?

I'm guessing that, for the knife scales, I'm looking for a couple of bits about 120 x 35 x 15mm, with matching grain pattern (cut a block, slice it down the middle, then turn the inner cut faces outwards to get the match).
