Pink salmon catch

Im not a great fish eater but I do like tinned salmon.

Today I found a whole load of Princes pink salmon 213g tins marked down to 39p.

`close to date?` I ponder, but no, January 2019...

So I bought the lot. (11 tins)

I like it in sandwedges but Im sure there are other ways of using it.

Any recipes?

Pasta with a bechamel sauce and plenty of black pepper and strong parmesan.

Or mix with mash potato. And create fish cakes. (Form burgers, dip in egg, ship in breadcrumbs and fry). Added herbs make it better. Dip in sweet chilli.

I also do salmon (or tuna) croquettes (fish cakes/fish patties) but I've never tried mashed potato. Here's a common recipe www.tasteofhome.com/recipes/speedy-salmon-patties (bear in mind that this recipe is will need 2 of your tins, and "saltines" are an American salted cracker (biscuit)

The one on the tin varies by the addition of a tablespoon of mustard. I vary it farther to make it Gluten Free by substituting crumbled Corn Flakes (the cereal) instead of saltine crackers (biscuits) that the recipe calls for.


Another use now that Summer is coming is a salmon salad:
-One tin of the salmon drained and crumbled
-One hard boiled egg diced
-About a tablespoon (or less to taste) of chopped gherkin
-A tablespoon of finely chopped onion
-A tablespoon of chopped celery
-Enough mayonnaise to dress the all the above once mixed

Mix all ingredients well, chill, and serve with crackers (biscuits) or spread over sliced bread.



Still another type cold salad would be a classic salmon and pasta salad:
-About 6 ounces of cooked and cooled pasta (adjust to taste)
-Salmon (2 of your tins drained and crumbled)
-about 7 ounces of black olives
-1/4 cup each of chopped onions and chopped celery

Mix all the above then mix with either mayonnaise or a vinaigrette type dressing. Serve at room temp or chilled.

Also be advised that most, if not all, the ideas for tinned salmon will work equally well with tinned tuna if/whenever that goes on sale at a future date.

Sweat a generous handful of fine dice onion in some oil in a pot.
Fry some curry powder in that.
Add some all purpose flour and stir to cook.
Off the heat, stir in some milk, a little at a time.
Add some salt & fresh ground black pepper AND a couple of good shots of Worcestershire sauce (I like Lea&Perrins).
When you have a gravy-like mess, add a tin of salmon/tuna and a big handful of peas.
Heat to bubbling again and serve over dry toast.

Sorry no exact proportions. I've been enjoying this visually disgusting mess for so long, I just do it.
