Pheasant in the Kotlich
I reckon you all know how to cook on this site so I will not be writing a normal RECIPE. Combinations are are what it's all about. My latest excitement with pheasant includes the following, onions, garlic, ginger, fat smoked bacon, cabbage, rosemary, s and p and generous sweet paprika, jointed pheasant and the special ingredient is precooked Sweet Chestnuts. And of course stock/liquid of some sort.
Make it would as for any stew, if there is room in the Kotlich add potatoes. If you like a richer flavour add red wine. Sit back on your log (not too far back) and enjoy.
