Not quite up to TeeDee's culinary standards, but this is my favourite recipe using Parasol mushrooms (Macrilepiota procera). This time though with the addition of Veiled Oyster (Pleurotus dryinus). If you haven't tried the latter I can recommend it (without liability :)) - it has really good taste and keeps a nice firm texture even when cooked.

Well, we both thoroughly enjoyed it :)

I make two meat versions of Stroganoff - beef with smoked paprika or pork with mustard. When I do a mushroom one I tend to prefer the paprika version.

I would add though that those Veiled Oyster are really delicious just fried in butter with black pepper.
