Inspired by the amazing Elkie Brooks rendition of "Lilac Wine" and finding lots of lilac hedging when we moved in here, I set about making some real "lilac wine". Its taken me 10 years to get it right but the recipe is right now and ready for sharing!
Lilac wine is a great start to the country wine season, coming in before elderflower and neck and neck with hawthorn. Its deeply scented and makes an amazing aromatic Summer wine that can't be bought commercially.
