I am based in norwich, I am looking at meeting up with someone to help me with sharpening knifes. I have been watching forums, videos and GORM however my knife from Findland is blunt, despite using a wet stone etc

Try using wet and dry paper on a flat board. It's gonna be better than an old oil stone, don't ask me how I know that! It's cheaper too.

Getting a good edge is all about maintaining the angle of the bevels. Find something to help you out, I find using a finger works for me. When I hold the knife, I place my finger on the spine of the blade and this sets the angle by making a gap between the stone and the spine. When I push the blade away I use a thumb instead.

I start with wet and dry and finish with fine grit Waterstones.

Start with a sheet of 300g wet and dry on something very flat, such as a piece of glass.

Take a look at British Red's tutorial on a £5 sharpening kit, its very good.

What grit Waterstones are you using?
