If you care to log onto www.deerstalker.com you will find an article I wrote some 4 years ago regarding my (far from perfect & correct?) method of fitting a knife with a new set of handle blanks. The piece will be found under STALKERS DIARY: "Things To Do When You Can't Go Stalking" and, if I remeber correctly, contained some suggestions/tips for choice of material.
Just a thought but have you considered getting a piece of hardwood flooring?
You will only need one bit and they are usually about 3/4 of an inch thick.
Plenty thick enough and theres quite a choice of woods out there.
Admittedly as I work as a carpenter I might find it simpler than some others to find bits but it's worth buttering up a local carpenter for offcuts.
