Hand Stitching Notebooks - what stitch?

Just curious about notebooks. I'm wondering about the stitches used for binding paper into notebooks. I'm thinking of hand making inserts for a travelers notebook style cover.

I'm guessing a simple up and under stitch that's reversed to go back over the same holes filling in the gaps.

Any online resources to learn n about this?
