In this case, @Forestdweller , I would look for a piece of steel and make the knife myself
i've been converting a worn-out file into two small woodworking knives (without any form of heat treatment, just cutting them to shape with a grinder) and an old machete i found (interestingly thicker then machetes are these days and with rivets instead of molded plastic handles) into a 9" blade -- more fun projects to pass the time then internet users for long term... i've also been gifted a short piece of stainless steel (of unknown type) which is destined to become a kitchen knife and a small skinner
i thought about making a knife from scratch but i don't have the technology available (nor the experience ) for the heat treatment and i doubt there's any place in the entire country to get it done professionally
once my situation has improved i'll get myself a set of new tools -- likely i'll pester folks with more questions when the time has come
