Whilst clearing a load of unwanted Brambles from some Hazel saplings on friday i encountered a surpriing number of Elderberries. Thought it was a little late for them but gathered/ate afew anyway. Was just wandering if anybody had any ideas on what to do with them other than making wine as i'm too impatient for that!:D

ELDERBERRY ROB

Elderberry syrup is known to keep the cold/flu virus from replicating

Place 1 quart of elderberries in a saucepan with 1 tbsp of water to prevent burning; simmer slowly, crushing the berries until all the juice is extracted; strain and then add 1 lb of sugar for each of pint of juice. Boil for 20 minutes and bottle when cold. It should be of a thick syrupy consistency. Dose is 1 to 2 tbsp added to 1 cup of warm water.

Made some vodka with ours (1lb berries, 1lb sugar, 1 litre of cheapest vodka) and after it's first month in the bottle we tried a bit tonight - OMG it's sweet; too sugary in fact. If I were making some more I'd use half as much sugar.

Anyway; one for the idea pot.
