Elderberry Recipes

Whilst clearing a load of unwanted Brambles from some Hazel saplings on friday i encountered a surpriing number of Elderberries. Thought it was a little late for them but gathered/ate afew anyway. Was just wandering if anybody had any ideas on what to do with them other than making wine as i'm too impatient for that!

Elderberry Rob, good for colds and flu, also Jams and jellies

ELDERBERRY ROB

Elderberry syrup is known to keep the cold/flu virus from replicating

Place 1 quart of elderberries in a saucepan with 1 tbsp of water to prevent burning; simmer slowly, crushing the berries until all the juice is extracted; strain and then add 1 lb of sugar for each of pint of juice. Boil for 20 minutes and bottle when cold. It should be of a thick syrupy consistency. Dose is 1 to 2 tbsp added to 1 cup of warm water.

Elderberry and apple sauce can make a nice change from plain old apple sauce to go with pork etc.

most things'll go in a crumble or pie - mmm, elderberry pie - sounds good to me!

Made some vodka with ours (1lb berries, 1lb sugar, 1 litre of cheapest vodka) and after it's first month in the bottle we tried a bit tonight - OMG it's sweet; too sugary in fact. If I were making some more I'd use half as much sugar.

Anyway; one for the idea pot.
