Couldn't get much easier than teddy chod (it's a Cornish thing)
2-4 big potatoes, sliced about 2mm thick
1 onion, roughly chopped
2 rashers good smoked bacon, chopped
Good grind of black pepper
Healthy glug of olive oil
1/4 cup (ish) water
Stir together and cook for about 25 mins (until potatoes start to fall apart) check and stir a couple of times, add water if it looks like it's about to weld to the bottom.
Serve with Brown sauce, or less traditionally but just as nice, reggae reggae sauce
I often lug my dutch oven to the beach and cook this as the kids love it
