I made 36 gallons last year and would recommend using 1 sachet of youngs cider yeast - will cost about £1.07. Pour this sachet into a litre carton of apple juice and cover with a cloth - at room temp - a day or two before you do your apples.
The natural yeast would do the job just fine, but in my experience does make a rough cider that is nowhere near as good.
Unless you want black hands, year rubber gloves!

Yeah, I've made cider (made some a couple of weeks back).
And I use a pinch of brewers yeast to help nature do its thing.
I only do this because one year I decided to leave it to ferment naturally, but some dirt must have got in there and it went off.
So, to avoid that, I keep it covered and add brewers yeast.

I make my own most years - crop was a bit poor though this time around. I usually chuck in some Champagne Yeast which does the trick. Seems to get it going faster and with a guaranteed none nasty yeast.
