Most of you will have your preferred recipe for these but, having just made them today, I thought I'd share my recipe :)

1Kg finely minced pork leg or shoulder including the fat
250g breadcrumbs
225g dried cranberries - chopped quite fine in a food processor
juice and zest of two oranges
2 tspns sugar
1 tspn ground cinnamon
salt & black pepper

Looking forward to boxing day breakfast now :)

Just happen to have a 1kg package of pork mince in the freezer. Chinese something-or-other. Not now.
I use cinnamon and orange in Greek seasoning. The right thing to do. Thanks again.
