I've just read PatrickM's 'Important piece of kit' tutorial and I was thinking about the tools he used. Is it necessary to use flint? Can you not just use a knife and a saw?

Yep.I do.
The stuff polishes up a treat with a bit of wire wool an a dab of veggie oil.
