got given this little stash by someone who was going to throw them out.

and two cleavers to round it off. The top one is very heavy.

they are all discarded due to oversharpening wear but theres lots there that can be used

Some of these knives Im going to keep, others will be on offer. (Ill probably give them away in return for help doing up the ones im keeping??)

but which do I keep and which do i get rid of??

I aim to turn a few into a kitchen set, but at least one i want to make into a nessmuk style blade

Keep one of the cooked meat knives at the top, the longer one would be my choice. The one on the right looks like a fillet, that could be handy

Of the two top steak knives I'd rehandle the one with the boken handle and get rid of the ultra worn out one, When they get that worn out they don't cut well and are prone to snapping. Boning knives always seem to get used a lot, looks like you've got a couple of curved ones, just keep the one you like most

the botton chopper looks to be recurved from so much sharpening, I find that a PITA so if you can't grind it back you might not have much fun with it
Big choppers are scary things, my dad uses a kukri since he doesn't have one

The choppers are too far gone to be of any use your knuckles will reach the chopping block before the blade goes through the meat. That curved knife which I think you want to make into a Nessmuck might be a flaying knife (skinner) and would probably be better left as it is perhaps just sharpen, polish and tidy up.

Having reviewed the kitchen knives I already have i have decided to keep the stainless (most of them)

I will dort out the others for sale or trade later

I love the shape of the blade of the last knife in the second pic down. Whats this type of blade called?

as I have several of that shape, i will willingly part with it if you want.

I dont want any money, im just looking for something to swap

That heavy cleaver (top blade in bottom picture) would probably make a good stand-in for a type of golok if it were cleaned up and re-ground. Could prove to be a really useful tool.

Sadly I have nothing to swap :( . Iv got a couple of steel bars though, a bench grinder and access to a wet grinder at college, providing I can butter up the clerk a bit that is :rolleyes: .

according to an old butchery manual they were called scimitars like the swords and you should still be able to get one from Victorinox probably with a plastic handle though

Does the small cleaver have damage to the spine as if it has been struck? If so it may be the small tool used to cut chops up by cutting through the joint in the backbone by battoning I cant remember what they were called though.
