LOL. You've tasted just which of our hash browns? Grated ones? Diced ones. Frozen Tater Tots or frozen Hash Brown sticks at fast food places? Southern ones? Northern ones? Midwestern ones? Potatoes O'Brien? There are at least a dozen different styles before you get into the sub-variations and frozen imitations; let alone family differences.

I shred raw potatoes, rinse in cold water and press.
Fine dice onion, eggs, S&P.
Make up: either a big loose mess in the pan or formed as burgers.
Fry in ever so little corn oil.
Nice thing is that everybody gets to call their creation "hash browns".
Some nights add corned beef and sauerkraut.
What RV said. Plus most restaurants start with frozen potatoes.Something we've been cooking a lot of recently is unpeeled spuds, diced and roasted in duck fat... they're delicious.
If it didn't take an hour, I'd munch them with breakfast every day.
